Cooking oil choices... Quote | Reply

First, pardon me if this subject has been posted here before. I have
been looking close at what foods I eat and remain confused by the
contrary information on cooking oils. I have a bad habit of deep
frying potatoes and am cutting back, but I need informed opinions on
which oil to fry with. I know Olive oil is great for health, but seems
like the wrong oil for french fries. Canola oil has the most disparity
of opinion. Some documents say it is really horrible for you.
Apparently it is made from Rape seed and Rape seed is bad for
consumption. Some say it would never sell if it was called Rape oil.
The name is a Canadian Government fabrication= Can-Oil. Others say it
is the healthy choice. I was considering the use of Sunflower oil or
Peanut oil to replace my current choice of Corn oil. It seems there is
no clear choice. So, please tell me your ideas on healthy (or least
un-healthy) frying oils. Thanks, Brewery

The American College of Cardiology did a study where they tested the
participants both before and after their meals (olive oil vs. canola)
The arterial blood flow in each volunteer's arm was measured using
a technique that combines ultrasound and a blood pressure cuff. They
then watched what happened to the size of the artery. The olive oil
meals caused vessels to constrict by 34%, whereas the canola oil and
salmon meals caused insignificant changes in blood vessels. Because
such constrictions injure the blood vessels' lining, they contribute
to heart disease. It is proven that omega-3 fats [the kind of fat
found in fish] cause no impairment in [blood vessel] function, but
olive oil with omega-9 fats does. The real importance is not whether
it's monounsaturated or polyunsaturated; it's whether it's omega-3,"
Vogel says. Canola oil is enriched with omega-3. Bottom line: In
my opinion, Canola is the best choice.

Only a half informed choice. Cold yes but when canola is heated all the omega 3 is destroyed. The cooperative Extension of the Unniversity of California says that peanut oil holds up as one of the best for frying

First I advice you to avoid fried potatoes. Potatoes itself contains fats and if you deep fry potatoes it contains additional fats. If you are font of fried potatoes then eat not more than 4 times in a month and use olive oil for fry. you can also use fish oil which is very good for weight loss.
